To Joule or not to Joule

what I would like to know is how do you freely set a time and temp with out choosing a pre program ??? I just unboxed a Joule an hour ago,.. and I still cant find that autonomy,... my other large concern is that I have to at least be connected to either internet or must have cell signal.. I travel a lot,.. sometimes Im way out in the country... no signal no internet.. id be screwed!......

Not to mention I normally cook larger pieces and cuts,. the specs say that the Joule can circulate up to 10 gallons of water in a precise temperature. I also have a Polysciene "Pro Creative" that I had delivered just a day ago,.. when I saw how large that thing was I immediately tapped the return button,. but now I am thinking its possible I may have purchased the wrong piece of equipment with the Joule...? the internal propeller on the Joule just seems like such a weak stream compared to the Polyscience which actually did feel a bit more stout with the water passage... Gotta figure which to return by morning... they are both 1100 watts ... the Joule is $50 more.. ??? anyone,... anyone,.... Buler,....???? ..........................Buler????

Joule can connect to your phone via bluetooth.

You can manually set the temp with the orange button at the bottom of the home screen that says "start joule".

I have two joules and a polyscience circulator, that I had well before Joule arrived. Joule specs are accurate. Joule takes up less room in the circulating container. Joule fits in a drawer for storage. Joule is much quieter. Joule heats more quickly. Joule is easier to carry around. I can monitor the temperature, and/or start and stop joule from anywhere.

you forgot to add that the joule app is not intuitive and has limited manual capabilities.

I came here to ask the same exact question. I don't see how it's possible to set the temperature manually or edit the temperature manually once the joule has been started.

Not sure what you mean. Open app. Look at bottom of screen. The orange button says "start joule". Push button. Input temperature you want. To change temp, just enter new temp. Can't get much easier. Alternately, search by food type and recipe. There are some things about the app I don't like, but I wouldn't say it isn't intuitive, or that I need more manual controls.

As the others have indicated: Bluetooth. If you're far away from your device, you will need an internet connection. You do need a cell phone to use this device, that's not optional. However, if you do not have internet where you are, but you're able to be physically near it (even if only temporarily) Bluetooth. You need a Bluetooth connection to set it up in the first place. Your cellphone does not need internet to open the app. it needs to be downloaded prior to, I have run my Joule when I was visit my sister, a few years back, and I had my phone on airplane mode, with no problems.

On average, I'm usually heating about 6-7 gallons of water, but have heated 12 gallons in the past. It handles the max volume of 10 gallons just fine. I have never used a Polyscience Pro Creative, however, I have used older model Polyscience immersion circulator. They are robust machines that get the job done. Which one you choose really depends on you. Make a decision and move one.

Most people seem to think the Joule app is great (particularly compared to the awful Anova app). Very intuitive and complete manual control. Play around with it and you'll figure it out.

Worth noting that wattage doesn't predict the relative heating abilities of the two devices. Joule uses a much more efficient heating technology than other immersion circulators, so it can heat water much faster. The flow rate of the Joule self-adjusts between 3.6-6L/min, whereas the PS is 8L/min. But the rate of flow isn't actually that important unless you have a very crowded or impossibly large container. I'm sure you could heat 100L if you wanted to, even though it's not officially rated for that.

I'd be willing to bet that Joule will heat more water than the Polyscience (I've found Polyscience's claims are not always believable in the past, and I've worked with them for decades in a laboratoy environment). ChefSteps actually seems to under-sell Joules' capabilities. There really is nothing else in Joule's league.

I appreciate all the input... I have been using a PS for the past 4 years in one of my clients homes the entire time... I typically will Sous Vide an entire A5 Wagyu New York trimmed a bit and cut into 4 long sections,... I have a water bath that is likely 10 gallons. I no longer have access to that PS machine that could have heated a Jacuzzi !!,... But I am going to still need to do similar size cooks and just want the best machine for larger jobs,.. Later I will upgrade to a PRO series again... I do my Wagyu at 125*/ for 3 hours,... remove, rest, then Sear over Binchoton Hibachi,.... brush on white soy , Dash demi. then try color pepper grind rest for 5 minutes slice sushi thin,. layer around platter loaded with caramelized shallots and garlic chips,.. IF the Joule can do this big of a job,.. IM in... I still have both machines and had arranged a return for the PS,.. but something in me just really wants manual control... IDK why????

@FrankM_3301 gave you the correct answer below. Just press the large "Start Joule" button for manual control, I almost never use the reprogrammed guides.
