Sweetbreads Question
David_Chung_117832
A lot of references I see call for veal sweetbreads when it comes to the cow variety. Does anyone know if there's any reason it can't be from a fully mature/grown cow rather than veal? Is there an issue or danger I should be concerned about?

I dig a bit of research, and i don't think it has anything to do with food safety. In older animals, the texture of the gland becomes tough and fibrous. There were a few sources that indicate the flavor may be too intense or undesirable from older animals as well. If you can get them, though, give it a shot. You may enjoy it.

Thank you so much!! Where did you find this information? I was unable to find anything that explained why a mature animal's sweetsbreads are less desirable. This site (

seemed to indicate it might be bad to eat, but didn't provide more information and I haven't found anything to back that up so I was very confused.

"The thymus tissue is considered a fat-rich by-product, is large and active during animal growth, but degenerates and is replaced by fibrous tissue after the animal has matured; therefore, the thymus is only available from younger calves and lambs." - Herbert W. Ockerman, Conly L. Hansen,

Veal sweetbreads are typically preferred in culinary contexts due to their tenderness and milder flavor compared to sweetbreads from fully mature cows. Veal sweetbreads are harvested from young calves, usually under six months old, which results in a more delicate texture and flavor profile. Sweetbreads from fully mature cows, on the other hand, can be tougher and have a stronger flavor that may not be as desirable for certain dishes. There isn't necessarily a safety issue with using sweetbreads from mature cows, but they may require different preparation techniques to ensure tenderness. Ultimately, the choice between veal sweetbreads and those from mature cows often comes down to culinary preference and the specific dish being prepared.
