Corn Ganache / Banana Juice

I was wondering if it would be possible to substitute diastatic malt powder for the amylase when making the corn ganache or banana juice. Any thoughts on this?

yes, you can do that. Diastic malt powder is simply a less concentrated/refined amylase.
