So u whip whites till hard peaks, form balls ,put it in 100%steam in rational oven on 9 mins, u make creme anglaise while whites are steamin,also i made linguine(orange pasta) from orange juice boiled with some agar agar and put over whites.There was more stuff there tho this was pretty much how you do it.
If you dont have professional kitchen or work in one, u could bath whites in hot milk and vanilla 85-90c, later u can strain that,seprate from milk,and thick it up with yolks and some vanilla,let everything cool, put some cookies on bottom of remekin, on that you put whites and on whites u pour creme anglaise till almoust drown them set that in fridge for 5 h or overnight.
