Still winter, time for more soups, stew, and root vegetables.
Vegetable broth (celery root, carrots, parsnip, tomatoes, onion, garlic, fresh ginger, parsley) S/P, coriander. Stained and set aside.
Potatoes simmered until soft. Purred, S/P, 20 g Butter, nutmeg blossom slowly stirred in the vegetable broth at medium heat.
Cabbage rolls: leaves of a cabbage head. Proofed rather tricky to release single leaf’s from the head but it worked. Blanched 2 min.. Filling: minced Beef, pan seared shitake, shallots, paprika, / Malabar pepper. Filled in the leaf’s and pan seared in clarified butter.
Some Smoked bacon and potato dices with fresh rosemary added before serving.
Probably the best potato soup I ever made so fare. One of the moments again you lean back, sigh and just smile.
