I was wondering if you can sous vide chorizo? I’m looking to make chorizo Pattie’s and want to sous vide them so they are all cooked through and at the right temp and all I have to do is sear them off? My question is really will there be too much fat rendered out and what time and temp.

You can sous vide sausages....you can sous vide hamburgers....yes, you can sous vide chorizo patties. 57C - 63C (depending on your doneness preference- that is medium rare to well done) for 1 - 4 hours. Then sear (or chill and refrigerate).
