A recipe for dessert with Key Lime??s?

I grabbed two bags of Key Limes and have already made a key lime pie with a graham crust in the past so I want to try something else! Does anyone have any not-too-advanced recipes they could share before Christmas Eve

The standard Key Lime Pie is on the back of the Nellie and Joes Key lime juice. Traditionally there is not much variation to the recipe because until the 7 mile bridge was built in the Florida keys ingredients were hard to come by, and is why a traditional key lime pie has condensed milk in it. An ingredient that is shelf stable and can be used to make a custard.
For the recipe below simply juice your key limes till you hit a half a cup. Be sure not to over cook, it will set more as it cools. If you wanted to have more recipes of what to do with key limes check out Nellie & joes website they have several - something I didn't know till looking for this recipe, despite being a born and raised Floridian. My personal variation of this is to use some lime zest (from standard limes, I didn't like the key lime zest). felt it just took it to the next level
Nellie & Joe’s Key Lime Pie
9″ graham cracker pie crust
14 oz. can of sweetened condensed milk
3 egg yolks (whites not used)
½ cup Nellie & Joe’s Key West Lime Juice
Combine milk, egg yolks and lime juice. Blend until smooth. Pour filling into pie crust and bake at 350º for 15 minutes. Allow to stand 10 minutes before refrigerating. Just before serving, top with freshly whipped cream, or meringue, and garnish with lime slices.
PS: as a garnish it might be fun to use the extra key limes to duplicate the chefsteps "Half-Candied Blood Orange" recipe but key limes. Just a thought.

Also, noticing you want to change the crust, food and wine had a few good pie crust ideas. they were "Granola Marshmallow Pie crust", "White Chocolate Meringue pie crust", "Sweet-and-Salty Pretzel and Waffle Cone Piecrust". Give them a search on food and wine's website if you are interested

I'm a big fan of key lime desserts, and one of my favorite recipes to make is key lime cheesecake bars. They're super easy to make and always a hit with friends and family. Here's the recipe:
Ingredients:
1 cup graham cracker crumbs
2 tablespoons sugar
3 tablespoons butter, melted
2 (8 oz) packages cream cheese, softened
1/2 cup sugar
1/4 cup key lime juice
2 eggs
2 tablespoons all-purpose flour
Baking usually takes 30-35 minutes.

Ingredients:

1/4 cup sugar
1/3 cup butter, melted
24 oz cream cheese, softened
