I have been cooking 8 pound Porchetta's for many years now using Sous Vide then finishing it off in Masterbuilt XXL Deep Fryer. I second that request for the official Chefsteps recipe. I am a loyal Studio Pass customer and would happily share what I have been doing. This past weekend I did three of them that weighed in at 27.5 pounds.
