I can't find anything really about a liquid quiche, other than he made one, but his recipe for quiche Lorraine can be found here:

I have only found this site:

and in there you can find the following:
"quiche lorraine is turned 'liquide' by sous-viding a custard filling at 83 degrees Celsius for 45 minutes - so it's fully cooked but still fluid - then pouring it into a pastry case made by baking shortcrust pastry, then grinding it with other ingredients and cooking it again as if it were a pancake, then adding dehydrated bacon.

I would love to make the recipe, but the above does not give me much to work with, it does not even make sense to me.
The book is in French, which I cannot speak/read. So I will have to write every recipe by hand into google translate, which I am not going to.
The reason I asked here, is because the recipe is mentioned in the modernist cuisine books.
Anyway, oh well.

You say the book is in French, what book? I don't believe there's anyone left from Modernist Cuisine here other than Grant Crilly. I know we have a set of Modernist Cuisine in my office, I'll need to see what they have in there.

The book that contains the liquid quiche recipe, is the "Planet Marx". At least I think so.
The recipe is mentioned in the modernist cuisine volume 1, page 64, at the top of the lower right paragraph.
So I explained to a friend why I didn't buy "Planet Marx" and he casually told me: "Why don't you use google lens?". I didn't know about this and I tested it and it blew my mind!
So yesterday I bought a used version of the book from Amazon. Hopefully the recipe is in there.
