For beef flank steak:
· What is the best ratio?
· How long before in fridge?
· How to stop it, before going to mushy ?

Best ratio: 1 tbsp per pound. Chill for 1-2 hours. Limit tenderizing time to avoid mushiness. Freeze for later use. Enjoy!
