What is the first thing you'll cook with your Control Freak Home?

Now that you have one in the mail (hopefully), what are you going to cook?

I think I'll try a plain ol' steak. I usually bagless sous vide steaks in my Anova combi oven, but the recent video is encouraging me to try a skillet again (and compare the CFH probe to my Combustion probe at the same time).

Mine just shipped. I'll be out of town when it arrives, so first steps will have to wait for a while. No idea what to try. I want to see how it performs compared my old, cheapo induction burner that lacks power, has poor heat distribution, and lacks fine control of heat levels.

I'll probably start easy with some eggs. Maybe wilt some spinach and make french-style omlettes? If the Control Freak works well enough with my nonstick pan it'll be a game changer for my partner who frequently overheats pans and hates cleaning carbon steel, stainless steel, and cast iron pans. 🤞

Owner of the OG control freak (bought 6months ago on big discount). Carmelizing a boatload of onions is revelatory with it, as is whipping up a big batch of clarified butter. They are super annoying on a traditional stove and so easy on CF!

also: I don’t see this advertised much but I LOVE the CF for pressure cooking. I have a Kuhn Rikon pressure cooker that I I always have to baby over a burner *just so*. Now I just plop it on the CF at 250f and let it ride

Sorry just gonna keep adding on things. We have gas burners at home and don’t fully trust kids to not hurt themselves when we are gone. Several are our presets are just for them to cook when we are away (we have a Mac and cheese preset). And it has been soooo nice for a long sauce reduction. Made a bordelaise that was reduced from a gallon down to a few cups. No scorching, even towards then end!

I made Chilean Sea Bass with wilted spinach (and rice, separately in the Zojirushi) with my CFH last night and it was a treat. Having the pan temp stay consistent while the thick cuts of fish slowly came up to temp (with the Combustion, Inc thermometer to monitor) made it easy to do some prep work on another dish in the meantime.

Probably an omelet, but could sear some ribeyes after they come out of the Joule. We did that last night — 137 for 2 hours and they were amazing.
