Nice! I've been going through a similar hand-pulled noodle phase but I've just gotten into it. How did you make your dough? I've been trying a lot of different high gluten flours that I buy from my local asian stores but so far I haven't had any luck. I've read that using Lye water can help making the dough pullable. Have you seen that in any of your research?

k. I've tried so many different kinds of flours and combinations of flours. In the end its really more about the technique.
I make my dough with 3 cups of King arthur A.P. Flour a cup and a half of cold water 3 tablespoons baking powder and 1 Tbls salt.
First I make the dough and let it rest for about 4 hour then I add the salt and powder. Then knead knead knead knead and knead after about
30 min of needing I start the Pulling and twisting. Don't cheat yourself here. There's gonna be a point when you probably think
that your ready to pull. Don't do it. Pull and twist for another 10 or 20 mins. This technique is all about trial and error. Good luck!!!
