Essentially any tender cut of meat or poultry, and most seafoods can be cooked to order. The time they take to cook will depend on their thickness. In my experience, items less than 2.5 cm / 1 in thick can usually be cooked to order if they are not a starter item where people expect them to be served very quickly.
In some cases, like a steakhouse, it may be more practical to hold a certain number of steaks at a given temperature to have them ready to serve promptly. When you sell one, you simply add another steak to keep a reserve of steaks ready to sell.
Of course, every restaurant has slightly different needs and it takes some practice and thought to figure out how to fit sous vide into service in a practical and profitable way.
