Hey Everyone!
I am supposed to be entering a competition with the focus being to highlight the pear. I am allowed to use red or green Anjou or Bosc pears. Now here is my thought: though its a competition held in spring (and pears are a fall/winter fruit) I think my best bet would be to go with a fall seasonal protein. I also need a local item on the plate (local as in Canada/ parries); so I was thinking something like wheat berries, Maple, or beef/bison and possibly saskatoons?
If anyone could help me with other seasonal protein or anything that would be fantastic! Also I think the idea here is it has to be more or less doable in an average home or something so I cant be liquefying and reverse spherifying a pear because apparently not everyone has that stuff in their kitchens!
