Alinea sometimes uses pea powder (whether freeze dried or cryopoached, I don't remember) in their "on the table" dessert presentations.
I bet dehydrated pea powder could yield some interesting results if used in cookies or pies. Momofuku Milk Bar uses corn powder to that end... I wonder how peas would work.

Puffed and crunchy you could toss them in a lot of sweet things, like wasabi peas but in a sweet application.

On one of his recent programs Blumenthal made pea ice cream, but the whole program was just kind of gimmicky so I don't know if it was any good or not.

Yes, I was looking at a lot of corn deserts. They can't be different. At least a good starting point.

Heston's Great British Food, fish and chips episode. There is no recipe or anything though, very much an entertainment program and not a cooking program.

Another thought: If you have access to a centrifuge you could try making a sorbet out of pea water.

Easy enough to ake a pea pudding (although not a fan of peas myself) or ham and pea ice cream. Cook the ham, then infuse the custard with the cooked ham and peas over low heat. Let infuse and then make your ice cream. Have done this with the oddest of ingredients (potatoes, black forest bacon etc etc). Ice cream is as limiting as you are creative. You could also likely make a pea cupcake with ham topping (or whatever your fancy-peas and ham are simply common so just re-imagined). IMHO.

I like the ham and pea idea! I always try to avoid going right to ice creams. It seems to always be a defualt. I've done bacon ice cream, prawn and others. Mousse could be fun.

I made the sweet pea ice cream with Heston for the Manchester Food Festival (the event we originally developed it for). I had to churn over 2000 liters of pea ice cream base for that two week event!
It was, however, really very good. Basically, it was Bird's Eye frozen peas that were pureed and sieved. Glucose and sucrose were added to get the solids and freezing point correct.
If folks are interested, I'll look around my old Fat Duck files and see if I can find the original recipe.

...and any other recipes you might think that are interesting. I'm thinking of a couple things with peas. Meringue, gel, parfait (but i make them all the time). Sweet microwave cake (but I feel like I've seen it on so many menus), ganache, fondant, frozen foam tubes, snow, marshmallows. I just can't decide. I think I want to pair with white chocolate. Things just floating around in my head for the last couple of days. Maybe I'll just try them all.

I ate that ice cream in Manchester though am sure Jocky told me he'd made it!
(With candied bacon which I have never been able to replicate without it going rancid in the dehydrator)
I also had a chocolate frozen popsicle thing made with I think Mas Amiel Maury spun in a centrifuge then frozen.
There were also two American girls on a Stage at the FD who I think weren't too happy they were in rainy Manchester (it was Summer)

— Jocky was certainly involved in the recipe development, but he certainly did not go with me to the University of Reading to borrow their huge ice cream machines and enormous walk-in freezer when doing the prep ;-)
I'm trying to recall who those stagiares would have been. Jocky and I rotated in an out of Manchester for two weeks, so I must have spent some time with them too. I think I've repressed most of my memories from that very rainy Manchester Festival.
