Crisp Film
Just got some Crisp Film and have been reading up on it as I am trying to make glasses out of juice and tuilles out of purees. For tuilles using purees I've read it's used at 1% and for a glass it's 10-15%. Was just wondering if these percentages sound correct and if there is a specific way it should be incorporated into the product? Ex. Sheared in with a blender, whisked in...
