Red Wine Fluid Gel

Hi, how would I make a red wine fluid gel, if it is even possible? Would Agar be the best way to go? What ratios would I use .5%? Thanks.

I would reduce some red wine to get rid of the harsh alcohol bite, weigh it and add anywhere from 0.25-0.5% agar. Bring it back up to a simmer and hold it there for 5 minutes to hydrate and then chill it until it's set, blend it to a fine puree and pass it for lumps. Higher agar concentration will give you a thicker gel.
