Striped mushroom omelet.

I've been watching the videos for this several time, if I don't have a combi oven, what is the best solution if I wanted to
make a larger batch, foiling a baking sheet with silpat or something like it?

Oh, I'm sorry, I had to read a second time to see that very important point.
I just ordered a pastry scraper to try this omelet, but I'll be doing a very small batch, using the silicone disk method. Good luck with your giant omelet!

Yes, but I want to do a larger batch - i.e not a pan.

MCaH calls for the mushroom layer to be spread on silicone discs cut from silicon mats (but not silpat, because of the other materials in the mat); the silicon mats with the striped layer are placed in a saute pan on the stove, then the egg poured over the top. It's covered with a lid for it to cook. It seemed really straightforward, with no hardware other than silicon mats cut into discs, and a pastry scraper.

Would something like a deep hotel pan, 4-5 cm of water, two pavement bricks
and a cookie sheet with silpat and a mold frame do something "similar" if well
covered with foil?
And what temps should I set?
