Cheese sauce: can it be refrigerated?

Can the cheese sauce with sodium citrate be put in the refigerator and then late be microwaved? I know it can be refrigerated and cut into slices but will microwaving break the emulsion? I'm planning on making some and bring it in to my job

I've never had a problem personally, though it's never just been a cheese sauce, it's always been Mac and Cheese or something similar. You'll probably be fine.

In my experiences, the stuff is pretty bullet proof. It will thin at high temperatures, but shouldn't break.

Yes, it works fine! I made a bunch of cheese slices from that recipe and it melted fine in the microwave. I found that it melts more quickly than the commercial stuff which was nice.
