Xanthan + All-Puropose Flour = Bread Flour?

If I wanted to do the souffle tonight, but didn't have bread flour, could I add Xanthan gum to my all purpose flour to give it the higher gluten effect, or am I way off on this? If it did work, any idea how much xanthan to add to the flour?

You could just use AP and it would work fine (I tried it)

Thanks. I have the souffle base in the fridge and just used AP. Glad it worked out. I was 1 egg yolk short, but everything was measured out fine. After the fact I realized I could have scaled down the rest of it based on the egg yolks, but oh well, it should be ok. Worst case it ends up being a chocolate cake. I used Mast Brothers chocolate too so it is going to be pretty awesome.

I also used AP flour.
In general to your question, unless you are trying to make a recipe gluten free, Vital Wheat Gluten is a much better structural aid than Xanthan gum for baking projects.

yeah I was just curious. wasn't trying to do gluten free. It all came out great.
