New updated version of the Texture eBook is now up (as of a week ago).

Martin's ebook was one of my first go to places for hydro-colloid info, years before any mainstream info was available.

Thanks as I hadn't seen the update, very cool to see there's a lot more pictures than in previous versions. It's still one of the most complete info there is on hydrocolloids and while the recipes are somewhat uneven in quality, there's a lot of great stuff inside.
