Wet or Dry Potatoes (non frying ideal)

What are the too wet or two dry potatoes that you "discard" from making french fries best used in? I have separated my potatoes by their specific gravity and now am wondering if say, the wet ones are good for mashed potatoes or something like that?

Mashed potato, baked potato, essentially any preparation where crispness is not a concern.
