@Grant @Chris I'm having some serious trouble with Wylie's Instant tofu noodle recipe in MC. I'm using Methocel A 15 C from Modernist Pantry. When I squirt the puree into hot water, the outside sets and looks as though everything is fine, but the center is mush and it falls apart. I brought the water to a boil, ladled it into a bowl, and extruded the noodle. Thoughts?
