I'll probably never make the entire recipe, but I learned a lot by reading it and following along, it is probably the most informative to date.

I like the "What do these ingredients do?" box - in this case I had a pretty good idea, and I've seen this kind of thing from Wylie and MC before, but it helped. Sometimes I am stumped by the use of modernist ingredients in the recipes - some of the stuff going on with the donuts was admittedly over my head. So, cheers for that!

I also thought the way the recipe was written was great. I started paying attention to chefsteps mainly for the videos, even though the accompanying recipes were very helpfully formatted. By most standards, the recipe is quite difficult and involved, but I found the way that it was laid out to be very helpful. It pre-empts most questions by referring to the appropriate spherification course material, as well as explaining the use of specialized ingredients. 

I went to university when a lot of introductory textbooks were starting to come out with multimedia supplements, or online coursework, and everything was usually terribly implemented. The online books often cloned the print textbooks, which themselves tried to fit too much "helpful" stuff like this into the margins. Since each sidebar was of marginal utility, none of them would draw attention, and the end result is that the whole book would look cluttered. Generous whitespace, with wide, empty margins are actually nice when you're reading. By contrast, in this case, the sidebar videos aren't excessive, and come from previous material which is itself well thought-out and made.
