French Cheese Cake

a friend is having his birthday soon. i told him i would make a dessert of his choice. without hesitation, he said 'FRENCH CHEESE CAKE!".
since i want to further my skills with sous vide, i thought i would use a water oven to help make it. i could not find a recipe for a french cheese cake using sous vide. is this doable or should i try my hands with an old-fashioned recipe? does anyone have a recipe they can point me to? any tips?

— I'm not actually familiar with French cheese cake per se. Do you have a link to an old-fashioned recipe? Might be able to suggest some tips if I knew what you were aiming to do.

i've seen some recipes that use the springform pan in a water bath placed in the oven.

so is it sort of halfway between an American cheesecake and a Japanese cheesecake in terms of incorporated whipped egg whites? Some of those look collapsed, which might be a sign of poor mixing or baking, unless they're meant to be that way.
I normally use springform in the water bath in the oven, but I don't normally make aerated cheesecake. I feel like maybe pure sous vide way might end up a bit dense, since you want rapid expansion of the air bubbles to get a rise? There are also no whipped egg whites in that recipe.
