dry ice and ice cream or sorbet- tin flavor
tshewman
Hi All, I've tried the dry ice recipe a few times and every time I get an immediate "tin" like flavor after churning. I'm using a kitchen-aid bowl (brushed SS). I didn't this would be causing the problem. Any ideas? It's actually to the point of using the traditional attachment is almost better (for flavor). :-(

That tin like flavor, does it go away after 20 or 30 minutes in the freezer? I'm betting that you have small bits of dry ice that hasn't sublimated yet.

Hi Chris, Thanks and the first time yes, and I thought that was the problem (although I admittedly am uncertain why CO2 would create such a flavor). However, after about 4-5 attempts since, the tin flavor remained. I store in glass containers to eliminate that possibility.
