Hot and Cold Tea?

I really would like to make Heston's hot and cold tea, but I can't for the life of me figure out how to make the divider for the cup. Is there some equation I need to measure the area of the cup? I hope it's a little more simple than that.

You're giving me flashbacks! This was the first dish that I developed with Heston back in 2003.

Here's how we did the divider: Cut a piece of cardboard to very snuggly fit the cup you want to use (it helps if the cup has relatively straight sides) and then wrap the cardboard in a few layers of plastic wrap. This will help seal any gaps between the cardboard and the cup, it will also let you reuse the cardboard divider (but get rid of the dirty plastic wrap for safety's sake).

We would poor the cold and then the hot tea onto either side of the divider to the same level (this is very critical) and carefully pull the divider up slow and steady. The tea needs to be served and enjoyed within about 3 minutes (and better if it is enjoyed within the first minute), otherwise heat conduction will even out the temperature difference.

It was not held for service. This was heated to order. Ah, the things you could do when you had a staff of nearly 70 for 35 guests per night.

He uses a rubber divider there (probably silicone), which I guess he's had custom made to fit his glasses.

Although I'm sure the cardboard and plastic wrap will work fine as an improvised solution, if you want something more durable, then you could probably obtain some food grade silicone and cut out a piece to size. Lots of products are made of silicon these days, so you could probably find a relatively cheap product, such as a silicone spatula that you could cut to size.

Alternatively, if you want to get really creative, make your own mould and cast your own silicone insert to fit your glass perfectly.

@Lachlan Funny story. We had all of these double-walled glasses made for this dish. But they were all totally different, so the silicone dividers we cut would fit one glass but not another! Do in practice, we cut a bunch of pieces of cardboard that kinda of fit all of the glasses, then wrapped them in different amounts of plastic wrap for service and smushed them into the glass to get a seal.

@ Trevor Yes, you can hold the tea in the fridge and in a beaker in a water bath for service.

I definitely want to try this. I know you need to use gellan and sodium citrate but I can't find the ratios of the ingredients anywhere. Can you guys help? Thanks!
