From memory since I'm not at home - 5 hours 170F-180F. I can't remember exactly, it's in Under Pressure and MC. They sear it off afterwards. I think a quick dip in a frier would be a lot easier because I had a tough time searing evenly.

Quick forum search shows that MC suggests 85C 4hr or so with a quick blanch beforehand. I imagine it would probably turn out similarly to Brandon's temp suggestion

@ Henri-thanks. I guess I should've gone that route first by checking the forum!

@ Brandon- I've actually never tried searing it, I've always just charred it on the grill. I think the ole' fryer would probably work great. thanks
