How long will the beetroot gel stay if i keep it refrigerated.?

what can i do to make it stable for 6 mnths.
if we add any preservative will it keep for that long

i bet you can freeze gel. Ive successfully frozen beet puree augmented with balsamic vin and mounted with brown butter.
beets tend to hold well for some reason. more than blached cauliflower for example. probably loses shelf life after being pureed.
does it NEED to be held 6 months?

if you freeze it then again it has to come back to room temp right?...i wanted to make a chilly gel...which has a shelf life of 6-8mnths...i wanted to do this commercially...i added some preservatives like citric acid and acetic acid...and was holding for 6mnths.

by commercial you mean for sale at a grocery store or farmers market or something?
i have little knowledge about production of shelf stable foods
