Try the CS recipe and substitute GF Flour. I will likely try this after returning from my current trip. I've made brioche buns, mini loaves, aerated honey brioche buns and garlic toast (using the isi-similar to the 10 minute cake) with cup4cup. For a gluten free alternative they worked out well. Oh, and I've also done a Gluten free skull on my Halloween edible grave (and pulled the middle out and filled it with truffled mac and cheese for brains). FWIW, I will likely start with the recipe and make modification as I learn/go. I know it won't rise (or very little) at room temp, but they will when they cook. I also know, they are usually better day one instead of day 2-3 as they tend to dry out more quickly (likely due to all the corn starch).
