Question about the duck breast, beet and chocolate

This may have been previously answered, but time doesn't allow me a long search. Exactly what kind of chocolate is used in this application? Thanks in advance.

It recommends dark chocolate which generally applies at LEAST 60%, however, I suspect they are leaning more toward 70%
