modifying the egg free vanilla ice cream recipe

can you replace the milk solids non fat with other product? Im not sure where can I found this ingredient assuming that is something different from dry milk (same milk in powder for babies). I would like to add vanilla sugar (instead of plane sugar) and cardamome nstead of vanilla in order to twistinto to a waffle taste, any advice how to fix the scale recipe ? (I will use pacojet for churning) This is the link of the original recipe

The addition of vanilla sugar cardamom should be fine. Im not sure what you mean by fix the scale recipe, that function appears to be working fine on my end.

thanks for the answer ben, the thing is i dont know how much cardamom should i add in order to replace some item of the original recipe.
should i replace the 8 grams of vanilla bean seed by cardamom ?

Are you adding cardamom ground? Or as pods? If you are doing and infusion with the pods and straining it out I would think 8grams is a good starting point. If you are adding ground cardamom I would start around .5g (it is a very strong spice in my opinion) you can always add more if you want it to have a stronger presence. Hope this helps.

i just did the recipe today with a few twist:
1) instead of 120 of sugar i did 60 of regular sugar and 60 of vanilla sugar
2) i skiped the vanilla bean
3) i skiped the non fat milk solid
3) i used like 5 ground cardamon
i took the mix at 22:30, then ice water bath for like 10 minutes and then the fridge, around 00:30 i touched and it was still liquid, not sure if the mix its gonna work, after 2 hours i guess the mix should be ready but i will take a look of it tomorrow
