do i get same results?

hello. i was tryin to make the oyster mayo recipe and wondering myself if using powdered soy lecithin would give me the same results as the liquid one.

I haven't tried myself but the way I understand it is that powdered soy lecithin is used as a foaming agent and liquid lecithin is used for emulsifying. So unfortunately no you can't use one instead of the other in a recipe. I would be happy to be proven wrong because powdered lecithin is really sensitive to humidity!

thank you very much louis-frederic. actually i have tried it and the results were not bat at all. what i did was to dilute the soy lecithin (2grms for about 400 ml of water) and used it as the liquid one. anyway i will try to find liquid one to check the results.

I don't know how much of a test it is. It isn't like the mayo really needs the soy lecithin. I'm sure you would be fine omitting it.

Liquid soy lecithin can easily be found in health food stores
