Cured Salmon
I'm making salmon Tostadas. I wanted to brine in white soy and tequila. would it be better to brine in sugar, soy, water, salt. How long should I brine? should I adjust the salt to the brine because of the soy? should I add the tequila to the brine or brush it on before i dry it?
