Recipe Request Hainan Chicken Rice

Hello,
I'm new to this forum and I hope recipe requests are not frowned upon. I would love to see a recipe for Hainan Chicken Rice upgraded a la chef steps. It is such a simple and delicious dish with massive potential. Thoughts?

The 'modernist' version i did involved infusing rice krispies with chicken stock then pressing the krispies into the chicken breast and grilling it.
I've done a modern version of actual chicken rice by cooking the chicken sous vide with ginger and scallion paste, but the texture is just different from traditional chicken rice, juicy but... something is lacking.
Ive also thought of toasting the rice in chicken fat a la risotto/paella, but never got round to it. Post your results if you find anything worth mentioning!

I have thought of doing a chicken tartar version using the
CS Rice Puffs
as the rice with a bite of raw chicken and a sauce.

Hainan Chicken Rice in Malaysia is everywhere. It's one of our popular dish. To make this you need ingredients such as, rice ( 5% of gullotino rice). Cook the rice with whole shallots, sliced ginger, pandan leaf, fried chicken fats, and a piece of tang kuey ( Chinese herbs) and margarine. Fry all ingredients in wok and then cook them together with rice in the rice cooker and add chicken stock. It will look yellow and has a fragrant smell. The chicken we usually use 1.8 kilo of Hainan chicken ( Mun Cheong Kai). Boil water to 100% and add onions, garlic, ginger, pandan leaf and place chicken inside, off fire for 45 minutes and it is ready to serve.
