Burrata Question

Hey, Just a quick one regarding the Burrata.
There is only a short sentance at the end of the recipe that states:
"Place in the brine until service. Burrata will keep in brine for about 30 minutes."
Why do they not last long? What happens after an hour or so? Is there anyway to keep them for hours ideally 3 - 4?

My guess is they will lose their texture after time. Although I have used burrata purchased from a vendor and they have held for service.

They get pretty soft and are prone to leakage, I forgot about a few in the fridge when I made them and they weren't too pleasant after a few hours.

Glad you asked. I just accidentally bought store-bought "burratina" thinking it was fresh mozz. Although obviously not the homemade version, it lasts for days brined in the fridge, so presumably it's possible (although I don't know burrata well enough to know great burrata from meh).

I too am curious about this, as I would like the burrata to last at least for a few hours, if not a few days. I've bought from the store (and even bought some imported from Italy), and it seems to hold for at least a few days. Is there something they add that allows it to hold?
