Pasta in the circulator

I am doing very large ravioli's in the style of chinese soup dumplings. The filling is a feta "bechamel" that was thickened with xanthan and then I added gelatin so it will set up and allow me to fill the ravioli before cooking will liquify it again.
I am thinking about different cooking possibilities and it dawned on me that I could maybe bag each large ravioli with salted water and cook in the bath. I've never tried anything like this before and wanted to seek out some advice before I go and ruin a bunch of hard work. What I am looking for more info on is the minimum temp needed to cook the pasta as well as the time difference there may be between the stovetop boiling water method and this.
My main reason for wanting to do it this way is because I have a feeling the large ravioli will be very delicate once cooked and I think that being able to cut a small slit in the bag to drain the water and then plating the ravioli from the bag will make for much less error/mess.

I think any potential benefits that might exist by cooking pasta in a circulator would be offset by the likely loss of the hallmarks of a properly cooked pasta noodle. I can understand possibly using a bath to keep cooked pasta warm without further gellatinizing the starches, but 1) I'm not sure that would actually happen over the course of a 4-hour dinner service, and 2) I'm also not sure about the possibility of water absorption through the pasta and into the filling. Few things ruin a stuffed pasta more quickly than a wet

No not really, I scrapped it due to time and frustration. I'd like to figure it out someday, maybe this summer when I have more time to experiment.

Ahh my bad, forgot I wrote that. I think I was going to go along those lines so that the pasta would spend as little time as possible in the water bath.

I have a chamber vac so I'm not worried about sealing liquid but why would you want to try and seal it when it's hot? And as far as I know, wheat starch gels between 52-63C.

A couple of comments and a question:
C1 - the slow simmer/skillet methods of cooking pasta suggest that water absorption isn't that high. You could check reasonably easily next time you cook fresh pasta conventionally by weighing before/after, then adding say 150% of the expected absorption volume to the bag (to keep some lubrication etc).
C2 - I may be way off base here, but isn't gelatinization what actually makes pasta cooked? If so, that temp is ~100C for wheat flour. If you're cooking at temps way below that, you'll need significant time for the kinetics to catch up and drive the process to completion. Of course, pasta is very thin, so diffusion/heat penetration isn't a problem so it's not THAT long (cf a tough cut of meat), but I'd ballpark (with no scientific evidence whatsoever) an hour? Not sure what that would do to texture?
C2a - if this is true, using a hybrid dough with another starch might be the way to go (gotta still balance gluten, of course). Chestnut flour would be both authentic and wonderful....
Q1 - how were you planning to seal hot water with the FoodSaver??? I am, sadly, bereft (and jealous) of a chamber sealer, and liquid sealing is my #1 gripe.

I ended up going the traditional route since I had a dinner party but I am going to experiment with this further because I think this could be really helpful for service.

, wouldn't that depend on a lot of factors? I would think it would be really hard to calculate. And if the pasta absorbed all the water, wouldn't the pasta stick to the bag? Maybe not if you had fat in the bag as well. I am so not brave enough to try this, I'll wait to see how your experiment turns out!

How does one go about calculating the amount of water needed for the absorption method of pasta cooking? I know if your standing in front of it at the stove you can just taste test but if I were to bag the pasta I'd have to be much more precise.

The major concerns I have is mostly regarding the time it will take for the water in the bag to reach proper cooking temps and how that will impact the texture of the pasta.

I have actually cooked risotto in a vac bag in the circulator, VERY creamy. I have also cooked corned beef in a bag filled with brine, so I don't see why your ravioli idea wouldn't work. One thing I hate about boiling water is how it bashes the tender ravioli so I think a bag of salt water in the water bath would work great, much easier to handle as well. Take pics!
