Edible glass

I've been trying to find some information on making edible glass such as beet, purple potatoe, celery glass. I think that they make for a great garnish on a lot of dishes but I can seem to find a recipe or discussion of the technique.

Any idea on how this is achievable? Isomalt? Thanks for the help!

pure cote b790 at ~12% and dehydration might be a good place to start experimenting

@Justin, do you want to encapsulate it? or make the glass from the beet/potato etc?

@Todd I staged at a place a while back where we made this beet glass and served it as one of the amuse. I remember it being a puree of beets that we would dehydrate but there was something involved that gave it the glass like look and texture. Sometimes, we would fry them and they would curl up in a cool way as well.

After looking up the pure cote b790, I think that may be it! Thanks a million. I'll report back once I've tried it out.
