Egg-Free Vanilla Ice Cream

I made the vanilla recipe this weekend using the dry ice technique and I was very happy with the result. Good texture, good flavor etc. One thing I noticed that I thought was weird...there are tiny brown flecks in the finished products, about the size and texture of coconut flakes. The only thing I can think is that maybe these are burnt milk solids or something? Anyone else experience this?

If you did not see the flecks in your ice cream base, then I would assume these flecks occurred while churning. I use this base frequently, I have encountered no flecks. The use of carrageenan, xanthan, and locust bean gum should not cause this to occur.

Could it have been the dry ice?

I churned the Strawberry angostura with the same dry ice but did not experience this.
