Why add water to potato pouch when sous vide

I love my sous vide and use it as much as possible. However I've been just putting the potatoes in the pouch and then cooking in sous vide. I've noticed in a few of your potato recipes (potato salad, fries) that you add water when you cook them. Doesn't that make them more watery and less flavorful?

It helps them cook more evenly, otherwise there would be air gaps that would be far less efficient at carrying heat energy compared to water

The fries also include water with glucose, baking soda and salt, which makes them fry well and taste good.

Exactly, the fries have a brine which helps them become more crispy and delicious. Also, note that the potatoes in the potato salad still have the skin on, which I would imagine reduce the flavour loss due to the water in the bag.
