I had some Kangarooon a trip through Australia but never cooked it myself. Sad thing, during the 3month trip I saw more road kills then living kangaroos, the Aussi road trainstop for nothing. For orientation: Kangaroo in texture and fabric is close to deerand grown Lamb, thus you could apply the same time and temperature.
