Cured 1 whole pork belly that was split I split into two sections. The belly was split as a whole belly would not fit into my largest vacuum bag. The belly was brined for 7 days in the bag and turned at least once every day to ensure that every part was in contact with the brine.
The belly is now cold smoking using DiggingDogFarm suggestion of cold smoking at ~75F for a minimum of 8 h to up to 24 h. I will be smoking the bellies for 4 h a day over 3 days, again a great suggestion from Martin. It is now day 2 of the 3 day smoke and when it is done I will post images of the bellies.
