I want to recreate the MC elote recipe (not in MC so far as I can tell)
The spicy aioli should be no problem. I would just buy the freeze dried corn. CS has a brown butter powder recipe (I'm assuming I should omit the sugar for a savory dish?). I think I would make cilantro ash for the "ash" component.
My struggle is the lime powder - citric acid, N Zorbit, and lime essential oils, but in what quantities?
Anyone else made a lemon or lime powder and have some quantities?
Corn powder I assume is just blended freeze dried corn?
