Playing with a few ideas for a composed salad starter for an asian menu i'm working on.
Steamed bok choy stems, nuoc cham pickled squash cones, pickled mustard seed, cilantro leaves, nuoc cham pickled carrot, fried shallot, chili oil, fermented black bean and garlic - sambal olek dressing
It still needs something more sweet since it's quite sour and savory. I don't want to go the typical route of just hoisin so i'm thinking a sweet soy thickened slightly with xanthan. I'm also thinking I will puree the dressing so it's not so clumpy and easier to sauce.
