Strip Loin Roast

How long would you cook a 2 - 2.5 kilo strip loin roast to 55 C? I am concerned about over cooking from a textural standpoint.

Depends on thickness/dimensions. You would probably be there in a couple hours +/_ but if a relatively thick roast, 4 would be fine.
