What is fundamentally different from baking flour bleached flour?

Working through the breading recipe for wings Colonel Sanders, I realized that we need a multi-component mixture of flour, to the breading was airy, golden and crispy. Do you have ideas for the implementation of this recipe? What are the ingredients needed for a good breading?
