Unfiltered olive oil?

I recently made a balsamic vinaigrette using this oil and put it in the walk in after it was finished. When it came time for service the dressing was the consistency of pudding. I've never used this oil before and was told to by my chef. I have never had a vin. solidify like that before after putting it in the cooler. What went wrong? Any help appreciated!!
