Making Pickled Apples in advance?

How long can the pickled apples be made in advance? Do I store them in the brine or out of the brine? I want to make them the night before I serve the dish but I just want to make sure they won't be over-pickled or something?

You can def make them the night before (mine were fine for 4 days). I would store them in the brine.
I imagine they would be good for like a week or so....

— Pickled apples will keep for a very, very long time. The most important factor is the temperature of your refrigerator. Here are some acceptable storage times:
Below 41 °F / 5 °C no more than 3 days
At 36 °F / 2 °C 10 days
At 34 °F / 1 °C 30 days
Below -4 °F / -20 °C indefinite
And these are for foods that have fairly neutral pH levels. Foods in a sharp acidic pickle will last longer still.
