Was so so good. I'm going to love this technique for when I can't use sous vide. "Dry brined" overnight, cooked to 55*C and served it with a simple local veg sauté and some Macon-Villages!

I live on the East Coast in Boston. I made this dinner in Myrtle Beach, SC, but I don't live there, just vacation there often.
