Olive oil Foam

Can someone out there please help me..

I am trying to make a smoked olive oil foam.. This I can make using the Sosa brand mixes.. Proespuma cold & emulsifying paste

The mix holds very nicely but the issue I'm having is that the Sosa mixes make it taste very sweet..

What can I use to get the same finish but without this annoying sweetness???

Try 8% glycerin flakes combined with the oil (e.g. 8g glycerin:100g oil). Heat to ~62C while stirring to combine.

The olive oil foam is a great innovative way to include olive oil with a different texture to any type of dish. You just need extra virgin olive oil, glycerin flakes and an ISI Whip.
